This bright, refreshing smoothie is naturally sweet, creamy and perfect for Summer!

I've dubbed it 'Mellow Yellow' because while it is flavorful, it is very mild. In partnership with Nebraska Furniture Mart, I used the Vitamix Ascent Series A2500. It's a simple yet powerful blender with three program settings: smoothies, hot soups and frozen desserts, as well as built in wireless connectivity allowing the A2500 to evolve over time.

The Mellow Yellow smoothie is full of fiber, contains no added sugar and has a heavenly texture that's reminiscent of yogurt. I downed one for breakfast but it can be enjoyed as a post-workout snack or dessert. If you are trying to cool down on a hot summer day, make sure to use frozen peaches and bananas. Not only will you get a cooling end result but a sweeter smoothie! Freezing and defrosting causes the cell walls of fruit to break down allowing all of its contents (i.e. sugars) to ooze out.

Recipe

Ingredients

  • 2 peaches, pitted and sliced
    no fresh peaches? sub with 1 1/2 cups of frozen peaches

  • 1/2 cup of ice cubes

  • 1 banana, frozen

  • 1 teaspoon vanilla extract

  • 2 cups soy milk
    feel free to sub with milk or your favorite dairy-free alternative

Directions

  1. Add all ingredients to your Vitamix or blender
     start with liquids, then add soft fruit / veggies then frozen ingredients

  2. Set Vitamix to 'smoothie' setting then start blender

  3. Garnish with your favorite seeds or nuts
    I garnished the mellow yellow smoothie with a sprinkle of chia seeds
